My philosophy as a chef is to start with the best and purest ingredients.

When I sourced our ingredients, I insisted on the highest quality and we follow the whole journey — from farm to table.

That's how I cook. You can taste when something's done right.

Wait isn't sunflower oil a seed oil? toggle

Yes! Seed oils are a nuanced topic, and we take it seriously. Every ingredient in KOATJI is intentionally chosen based on flavor, performance, and science — not trends. Our organic high-oleic sunflower oil contains 75% monounsaturated fat, making it naturally low in omega-6 and rich in oleic acid (omega-9) — the same well-regarded monounsaturated fat found in olive oil. Clean, stable, and with natural vitamin E. That’s why KOATJI rates excellently in the health category on the YUKA app.

Will it work in my morning coffee and matcha? toggle

That's exactly what it was made for. KOATJI creates silky microfoam for espresso while its subtle umami complements ceremonial matcha instead of overpowering it. One oat milk, both rituals.

Why koji? toggle

Koji is the ingredient behind foods like miso, soy sauce, and sake. It's been used in Japanese kitchens for over a thousand years. In KOATJI, koji naturally creates depth, creaminess, and a clean finish - without gums or unnecessary additives.

Is there added sugar? toggle

No. We do not add any sugar to KOATJI.

During our natural fermentation process, enzymes break down the starches in organic oats and koji rice into naturally occurring sugars (maltose and glucose). Current FDA regulations require these naturally created sugars to be labeled as "Added Sugars" on the Nutrition Facts panel, even though no sugar or sweeteners are added as ingredients.
