Koatji’s refined take on the classic Aperol Spritz highlights citrus, bitters, and Koji for a smooth, umami-laced profile with an aromatic herbal finish.

Cocktail clarification, also called milk wash, involves mixing all ingredients - spirits, citrus, fruits, bitters, sugars, etc. - with milk, resulting in a transformed drink by removing suspended particles.
This method produces crystal-clear cocktails with unexpectedly smooth, silky, creamy textures.
While bovine milk is traditionally used for clarification due to its unique curdling properties, plant-based milks don't curdle the same way. To address this, we freeze the cocktail, allowing plant-based milk to curdle effectively.
In our twist on an Aperol Spritz, we elevate the flavors with an umami boost from our star ingredient, Koji, and create a silky, smooth version of this beloved Spritz.
4 Servings
CLARIFICATION
100 g Koatji Milk
50 g Orange Juice
25 g Lemon Juice
300 g Aperol
2 Dashes of Angustura Bitters
Orange Zest (one Orange)
10 g of Lemon Thyme (or regular Thyme)
PROCESS
1. Mix Aperol, Lemon Juice, Orange Juice, Koatji Milk, Grated Orange Zest, Angustura and Lemon Thyme.
2. Let it infuse for an hour and then freeze in a container for minimum 8 Hour
3. Take it out of the freezer, defrost and strain it through a double layered kitchen towel
FINAL DRINK
9 cl Koatji clarification
9 cl Prosecco
Orange Zest (Garnish)
Lemon thyme (Garnish)
PROCESS
1. Poor the Clarification into a wine glass with ice
2. Top the Spritz with Prosecco and Serve
3. Garnish with Orange Zest and Lemon Thyme and Serve
