GOLDEN SPICE KOAtji
A warming blend of turmeric, ginger, and aromatic spices, crafted for comfort and balance. A rich and soothing drink with layered spice notes, delivering depth of flavor and a sense of natural wellness in every sip.
GOLDEN SYRUP
50 g fresh turmeric
40 g fresh ginger
20 g dried chamomile flowers
100 g raw honey
3 small cinnamon sticks
15 g vanilla paste
10 black peppercorns
15 green cardamom pods (lightly cracked)
0.5 g kosher salt
200 gr water
Zest from 1 Lemon
INSTRUCTIONS
1. Add all ingredients to a pot and bring it to boil.
2. Heat on low and simmer gently for 10 minutes.
3. Strain through a fine mesh or cheesecloth.
GOLDEN KOATJI FOAM
200 g Koatji milk
30 g Golden Syrup
1 g Agar Agar
INSTRUCTIONS
1. Add Koatji milk and Agar Agar to a pot and stir well.
2. Heat it up until boiling while constantly stirring. Let it boil for about 30 seconds to activate the agar agar. Add in the golden syrup and cool down.
3. Strain through a fine mesh or cheesecloth.
4. Pour into a siphon bottle.
5. Charge with N₂O gas until no more can be added.
6. Shake well.
FINAL SERVING
170 g Koatji Milk
35 g Golden Syrup
Golden Koatji Foam
Turmeric, ground
Ice Cubes
INSTRUCTIONS
Pour in the Golden Syrup into a glass, add ice cubes and slowly pour in the Koatji Milk.
Finish the drink with the Golden Koatji Foam and a dusting of turmeric.
