COCONUT PASSION SMOKE

A bright passion fruit cocktail with white rum and smoked rosemary syrup, finished with a light coconut foam – tropical, slightly smoky notes balanced with fresh acidity and a smooth, creamy coconut finish.

SMOKED ROSEMARY SYRUP

200 g Sugar 

250 g Water

15 g Rosemary 


INSTRUCTIONS
1. Lightly torch the rosemary with a blow torch.

2. Add the “smoked” Rosemary, Water and Sugar to a pot and bring to a boil, then let it infuse for 30 minutes.

3. Strain and cool down. 

COCONUT FOAM

170 g Koatji milk

30 g Coconut Cocktail Syrup (Monin or Similar)

1 g agar agar 


INSTRUCTIONS

1. Add Koatji milk and Coconut Syrup to a pot and stir in the agar agar.

2. Heat it up until boiling while constantly stirring. Let it boil for about 30 seconds to activate the agar agar and cool down.

3. Strain through a fine mesh or cheesecloth.

4. Pour into a siphon bottle.

5. Charge with N₂O gas until no more can be added.

6. Shake well.

FINAL SERVING

5 cl Passion Fruit Raw Juice 

4 cl White Rum 

5 cl Smoked Rosemary Syrup 

Coconut foam


INSTRUCTIONS

1. Add passion fruit juice, white rum and smoked rosemary syrup to a shaker.

2. Shake with ice and strain into a cocktail glass.

3. Top with the coconut foam.
