Chocolate Ganache with Breadsticks

A velvety blend of dark chocolate and Koatji milk, sweetened with date syrup and vanilla, finished with a touch of sea salt and extra virgin olive oil. Paired with crispy breadsticks, this luxurious dessert offers the perfect balance of sweet and savory in every bite.

INGREDIENTS

180g Dark Chocolate 66%

160g Koatji Milk

15g Date Syrup

5g Vanilla Extract 

Pinch of sea salt

Extra Virgin Olive Oil

PROCESS

1. Chop the Chocolate into smaller pieces and add it to a bowl

2. Heat up the Koaji Milk in a pot to 185 F

3. Pour the warm Koatji Milk over the Chocolate and stir until all the Chocolate is melted 

4. Add the Date Sirup, salt and the Vanilla Extract to the Chocolate 

5. Take another bowl and fill it with ice and add some water till it covers the ice

6. Place the bowl with the Chocolate over the ice batch and whisk the chocolate gently

7. When the Chocolate is about 70 F, pour the chocolate into a container

8. Leave the Chocolate Ganache in the fridge for minimum 3 hours

9. Cannelle the Chocolate Ganache and drizzle with a bit of good “grassy” extra virgin olive oil and a pinch of flaky sea salt
