CHERRY LICORICE FOAM

A vibrant blend of cherries and beets with creamy Koatji milk, topped with light licorice foam – juicy, slightly earthy notes balanced with gentle sweetness and a smooth, rounded finish.

CHERRY & BEET SYRUP

200 g Cherry Juice 

50 g Beet Juice 

150 g sugar


INSTRUCTIONS
Mix all the ingredients in a pot and bring to a boil until all sugar is dissolved and then cool down.

LICORICE FOAM

200 g Koatji milk 

15 g sugar 

1 g agar agar 

5 g Licorice Powder 


INSTRUCTIONS
1. Mix agar agar powder with the sugar and the licorice powder. 

2. Add Koatji milk to a pot and stir in the agar agar/sugar mix.

3. Heat it up until boiling while constantly stirring. Let it boil for about 30 seconds to activate the agar agar and cool down.

4. Strain through a fine mesh or cheesecloth.

5. Pour into a siphon bottle.

6. Charge with N₂O gas until no more can be added.

7. Shake well.


FINAL SERVING

40 g Cherry & Beet Syrup 

150 g Koatji Milk 

Licorice Foam

Ice Cubes 


INSTRUCTIONS

Add ice cubes to a glass and pour the Koatji milk over the ice. Slowly pour in the Cherry & Beet Syrup. Finish with licorice foam.
