BLUEBERRY MATCHA CLOUD

A refreshing Blueberry Matcha Shake with bright lemon thyme and smooth matcha foam – a familiar flavor pairing, lifted with a fresh herbal twist and a silky, elevated finish.

BLUEBERRY LEMON THYME SHAKE 

200 g Frozen wild blueberries

20 g Maple syrup

200 g Koatji Milk

70 g Banana

5 g Vanilla paste

1 g Lemon Thyme (without the stems)

Lemon zest (½ lemon) 


INSTRUCTIONS
Add all ingredients to a blender and blend to a smooth texture

MATCHA FOAM

3 g Matcha + 50 g Koatji milk

150 g Koatji milk 

20 g sugar 

1 g agar agar powder


INSTRUCTIONS
1. Whisk matcha and 50 g Koatji Milk until all the matcha is dissolved.

2. Mix agar agar powder with the sugar. 

3. Add 150 g of Koatji milk to a pot and stir in the agar agar / sugar mix. 

4. Heat it up until boiling while constantly stirring. Let it boil for about 30 seconds to activate the agar agar and cool down. Add the Matcha/Koatji Milk.

5. Strain through a fine mesh or cheesecloth.

6. Pour into a siphon bottle.

7. Charge with N₂O gas until no more can be added.

8. Shake well.


FINAL SERVING

Add the blueberry shake to a glass.

Finish with Matcha foam and top with fresh lemon thyme
